Rubber is great for resisting other fluids aside from water whereas some of these other hydrophobics simply wouldn't suffice. We commonly use latex in a number of other directly relevant applications to contain the same sorts of liquids pretty much any gamer-specific LED keyboard will be squirted with a multitude of times over its lifespan.
